Small Bite Party Appetizers

December 31, 2015 By very EATalian Leave a Comment

Small bite party appetizers: Gorgonzola, Mascarpone, Pear Compote, Walnut in a cup | Very EATalian2016 is almost here! Whoo-hoo!!

My plans for New Year’s involve staying home with my family, preparing TONS of stuzzichini (small bites), eating zampone and lentils (for good luck), fiercely playing tombola to possibly win some money, let my cousins and uncles scare me to death while they set off firecrackers, drink a glass or two of fine Franciacorta, and shamelessly do the conga around the table to 60’s, 70’s, and 80’s music. Oh, and I failed to mention my favorite part: lighting sparklers!!

What about you? How are you going to ring in the new year?? If you’re hosting dinner or you’re participating in a potluck, I’d like to inspire you with some of the small bite party appetizers I made for our NYE party. They’re pretty, refined, and elegant — suitable for any party and especially perfect for New Year’s Eve!

Quick Panettone Muffins

December 24, 2015 By very EATalian Leave a Comment

Quick Panettone Muffin | Very EATalianQuick Panettone Muffin | Very EATalianIf you’re still trying to figure out what dessert to make for Christmas, you should consider these delicious mini-panettone muffins. Not only are they easy and quick to make, they’re also super cute!

These little guys are a “cheat” and miniature version of panettone, the Italian traditional Christmas (sweet) bread. No leavening is required. Although their texture will remind you more of a cake, their flavor is definitely similar to the panettone’s….

Soft Torrone: Italian Christmas Nougat Candy

December 21, 2015 By very EATalian 2 Comments

Soft Torrone - Italian Christmas Nougat Candy | Very EATalianSoft Torrone - Italian Christmas Nougat Candy | Very EATalianSoft Torrone - Italian Christmas Nougat Candy | Very EATalianFor those who haven’t experienced torrone before, you are in for a treat.Torrone is SUPER yummy and definitely one of the most traditional Christmas treats in Italy.  It wouldn’t feel like Christmas, if we didn’t finish dinner cutting a big bar of torrone into small pieces so the whole family could enjoy it. When I was a kid, I regularly found a bunch of delicious little torrone bars (torroncini) in my Christmas stocking along with chocolate coins wrapped in golden foil and a pack of cigarette-shaped chocolate candies (…so wrong, I know).

Torrone is pretty much a white nougat, i.e. a mixture of honey, sugar, whipped egg whites and toasted nuts, all held together by sheets of flavorless wafer paper. It can vary in consistency, shape, thickness, and flavor. This recipe is for a soft and chewy torrone — it’s loaded with toasted almonds, hazelnuts, and pistachios, with small bits of candied orange….

Swedish Ginger Cookies

December 16, 2015 By very EATalian Leave a Comment

Swedish Ginger Cookies (Pepparkakor) Yeah, yeah, yeah. Pepparkakor aren’t “very EATalian“, I know…BUT they’re cookies I always love to bake around Christmas, so they’ve rightfully earned their place on this blog. Not only do they bring out the Christmas spirit in the house with their wonderful scent, they also spark my creativity. As you can see from the pictures, I went a little crazy with shapes and icing decoration!

Besides being cute Christmas tree ornaments, I found they also make the perfect nice little addition to a rustic gift wrapping.

Pomegranate Sausage Risotto

December 13, 2015 By very EATalian Leave a Comment

Pomegranate Sausage Risotto | Very EATalianPomegranate sausage risotto| Very EATalian I always miss my husband…but I miss him even more when it’s time to de-seed a pomegranate. With a couple of ninja moves, he’s able to get every single seed out the whole fruit. No matter how hard I try, I make a huge mess and I splatter everything with red juice. It’s like a blood bath.

Yes, de-seeding a pomegranate is a pain for me. However, this fruit is so delicious and healthy, it’s totally worth the effort and it regularly makes it to my table each fall. I’m not sure how you like to eat it, but my new thing is to add it to a basic risotto with sausage. I love how the pomegranate brightens up the sausage heartiness and adds more textural interest to the whole dish….

Velvety Kabocha Squash Soup | Very EATalianVelvety Kabocha Squash Soup | Very EATalian
If you think I’ve posted too many squash recipes lately, you may be right. I’m kind of obsessed with kabocha squash in particular, for its versatility. After making some delicious fluffy gnocchi and baking some adorable squirrel-shaped cookies, now it’s time for a nice and easy soup recipe!

I think the sweet flavor of this vegetable really shines in velvety soups like this one….

Thanksgiving in Italy

November 26, 2015 By very EATalian Leave a Comment

Thanksgiving in Italy | Very EATalian

It’s “Thanksgiving Eve” and I’d like to share a fun fact about me: although I’m Italian, my family is 100% Italian and we always lived in Italy, we’ve celebrated Thanksgiving for more than a decade. I’m talking about a full-blown dinner with stuffed turkey, gravy, cranberry sauce, mashed potatoes, maybe a casserole, and a pumpkin or apple pie as dessert. It’s kinda weird…I know. It all started because I wanted to help some of American friends feel like they were back home on such a special day. Then, after a couple of years, my family just loved the idea of having an excuse to get together and eat delicious food that was somewhat “exotic” (although they never really quite understood the sweet potato casserole topped with marshmallows)…so Thanksgiving sorta became a pre-Christmas gathering and my family keeps this tradition going. My dad even made up his very own Thanksgiving wishes and my brother and I can’t help but burst out laughing when he joyfully (and loudly) says to everybody “Happy Tacchin Day!!” (tacchino = turkey) with his super thick Italian accent. Yeah…and I thought “Happy Hallowey” was the worst English he could speak….
