Gorgonzola, Pear and Walnut in a Cup [ Bicchierini di Gorgonzola, Pere e Noci ]

Since cups or glasses vary in capacity, I intentionally didn't include any measurements.
Ingredients
  • whole wheat crackers, crushed
  • unsalted butter, melted
  • 1 part gorgonzola cheese + 1 part mascarpone cheese
  • a generous drizzle of heavy cream
  • walnut kernels, coarsely chopeed
  • pear compote at room temperature (*), for topping
Instructions
  1. Blend crakers and melted butter (you don't need much of it). Using a teaspoon, carefully arrange the mixture at the bottom of your cup or glass.
  2. Whip together cream cheese and gorgonzola cheese. Soften the mixture adding a generous drizzle of heavy cream. You should obtain a cream that's soft enough to be piped into your container. With a piping bag, pipe some cheese mixture into your cup.
  3. Top with pear compote and a chopped walnut.
Notes
*How to make pear compote: combine 2 pears (cored and diced) with 3 T of sugar in a small pot. Add ⅓ cup of water and cook slowly at low heat. Add water if necessary and cook until pear has softened and has almost reached a pureĆ© consistency. This makes enough to top 10 shot glasses.
